Hi Guys! Today I am going to be showing you how to make this really yummy food so heres what you will need: One serving of milk, cheese, or yogurt provides 8 grams of protein and 9 essential vitamins.  Most people only consume 1-2 serving of dairy each day, but to meet dairy recommendations they should be eating 3 full servings.  Milk is one of the most requested but least donated item to food banks across the nation. If you feel the need to help out with food banks, keep that in mind.
The cheesecake layer in this trifle is packed with cream cheese and milk.  I wanted to be sure my family was getting a full serving of dairy with their dessert.  The more dairy you consume helps you later in life.  Strong bones and healthy teeth are just a benefit from getting those dairy servings in when you are younger. When you bake the cake, make sure you drain your pineapple and use that as part of the liquid in the cake batter.  This will help give your cake a little bit of pineapple flavor.  Let it cool and then cut it into 1 inch cubes.  When you put the trifle together, you will have a little bit of cake leftover.  You do what feels best to you…I chose to snack on the extra cubes every time I walked through the kitchen.
With any pina colada, you need to have some coconut.  The no-bake cheesecake layer is made from cream cheese, milk, pudding, coconut, and Cool Whip.  Beat it all together and layer it with the cake and fruit.  Now go ahead and take a big bite.  It is like being transported to a tropical island.  Well, as long as you keep your eyes closed, so you do not see the pile of dirty dishes in front of you from baking up a storm.

Here’s what you’ll need to make cake pops:
• cake mix + ingredients listed on the box
• 1/3 cup icing
• Candy Melts (available at most craft stores)
• 6 inch lollipop sticks (available at most craft stores)
• sprinkles (optional)Here’s the gist of how you make cake pop.
repare a boxed cake mix as directed on the box (I prepared a 9×13 Devils Food cake).  Let the cake cool.  Wash your hands.  Crumble the cake into fine crumbs with your hands in a large bowl.  Mix in about 1/3 cup of icing (I used store bought milk chocolate) with your hands.  The mixture should be dense but not gooey.  Gooey cake balls gross me out.  Grab a cookie scoop (I used my1.5 T scoop).  (Remember, everyone needs a cookie scoop, or 3.)  Scoop out the mixture, packing the cake mixture into the scoop as you scoop it (I smushed the open side of the cookie scoop against the inside of the bowl).  Smush the mixture in your hand to pack it tightly into a ball.  Roll it into a nicely shaped ball.  Roll the remaining mixture into balls (my cake mix made 18 cake balls). Now, onto the coating process.
Grab your Candy Melts (I purchased mine from JoAnn Fabric) and a small microwaveable dish (I used a small oatmeal bowl).  Put about 5 morsels into the bowl and melt them in the microwave.  Grab your cake pop sticks (I purchased mine from JoAnn Fabric).  Dip your stick into the melted Candy Melt and quickly stick it into a cake pop at least half way down.  Repeat with remaining cake pops.  Set pops on a cookie tray.  Freeze for about 15 minutes (they wouldn’t fit in my freezer so I put them in the fridge for 30 minutes– worked fine).  Put your Candy Melts into a microwaveable mug (I filled mine to the top).  Melt the Candy Melts as directed on the package.  Dip the cake pop into the mug, evenly coating it.  Let the coating drip off.  Place cake pop on cookie sheet.  If using sprinkles, add immediately before coating sets.  Repeat for remaining pops hese may seem like a lot a work, but trust me, once you have it all mapped out it’s a breeze.  I spent maybe an hour on these (not including baking and cooling times).
If you want your cake pops to be true cake pops, rather than cake balls with sticks in them, instead of putting them on a cookie sheet to dry, insert the stick into Styrofoam for the coating to set.  I wanted mine to sit on the platter but still be cake pops, so that’s why I went the route I did.
FYI, the Candy Melt coating is really good.  I used chocolate cake and you barely tell there’s dark cake underneath the coating.  Just thought I’d throw that out there.

A quick and easy dish for those busy weeknights, and it’s chockfull of veggies!

So here’s how you make this:Boil up some salted water and cook the pasta according to package instructions. While that’s happening, let’s roast some fresh asparagus in olive oil, salt and pepper in a 450 degree F oven for about 10 minutes or so. Let it cool a bit before you cut them into 1-inch pieces. Then we’ll take some homemade pesto and julienned sun dried tomatoes…and toss it with the pasta with some fresh mozzarella cubes.Top with a fried egg…and let the yolk just oooooze out before you dive in.

Red Velvet Pancakes with Cream Cheese Glaze

Ingredients
  • 2 cups all-purpose flour
  • 3 Tbsp cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 cups milk
  • 2 Tbsp white vinegar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 Tbsp red food coloring
  • 2 tsp vanilla extract
  • 1/3 cup salted butter, melted
  • 1 recipe Cream Cheese Glaze, recipe follows
  • fresh raspberries and mint leaves, for garnish (optional)
  • Cream Cheese Glaze
  • 6 oz cream cheese, softened
  • 6 Tbsp butter, softened
  • 2 cups powdered sugar
  • 1/2 cup milk, plus more if desired
  • 1/2 tsp vanilla extract
Directions
  • Preheat an electric non-stick griddle to 350 degrees. In a mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt, set aside. Measure out milk into a liquid measuring cup and whisk in vinegar, allow mixture to rest for 2 minutes. Pour milk mixture into a separate large mixing bowl and add in sugar, eggs, red food coloring, vanilla and melted butter. Whisk mixture until well combine. While whisking, slowly add in dry ingredients and mix just until combine. Butter griddle if necessary and pour about a 1/4 - 1/3 cup batter (depending on how large you want your pancakes) at a time onto hot griddle (you can also use the back of measuring cup or spoon to lightly spread batter from center out to the edge a bit so they aren't thicker in the center then they are on the edges). Cook until bubbles begin to appear on the top surface of the pancakes then flip and cook opposite side until pancake is cooked through (I didn't want the tops of the pancakes to be brownish red so I flipped them a little earlier than I normally do with pancakes, I didn't wait for many bubbles). Serve warm with Cream Cheese Glaze and garnish with fresh raspberries and mint leaves if desired.
  • Cream Cheese Glaze
  • In a mixing bowl, using an electric hand mixer set on medium speed, blend together cream cheese and butter until well combine and fluffy, about 2 minutes. Add in remaining ingredients and mix about 1 minute until well combine, adding additional milk to thin if desired. Store in an airtight container in refrigerator
